Saturday Market Newsletter June 14, 2025
Blackberries, Peaches, and Ice Cream--Oh My!
June means summer favorites are back at the market. This week we hear Blackberries will be showing up. Think blackberries on ice cream, blackberry cobbler, and fresh berries for snacks. Peaches are also here to welcome the beginning of summer, and while you're thinking summer don't overlook the ice cream, popsicles, and gelato options we have.
We hope you will stop and visit this Saturday's sponsors, Hoffman Brothers and The Learning Zone. Sophie Buck (weather permitting) will be back to play for customers this Saturday. Make plans now to join us from 8-Noon around the historic Rutherford County Courthouse. You are sure to find something for Dad. The market is open rain or shine. And don't forget to pick up your June passport card at the Market tent.

Making Beef Tallow At Wagyu Farms
The Story of Beef Tallow's Resurging Popularity
Beef tallow is making a comeback. It's been growing in popularity the past few years, and now it's in high demand for cooking and cosmetics. In fact, predictions are that the demand this year will outpace the supply. As eating habits change and people are looking for more natural ways to cook (and in their beauty products), beef tallow has gained a fan base.
Simply put, beef tallow is the result of rendering the fat from beef to make a cooking fat (or skin lotion). Regina, at Wagyu Farms, started small, sharing her homemade tallow with friends, and now she sells out when she brings it to the Saturday Market. She jokingly calls herself the Queen of Tallow.
Her process is simple, but it takes time to get it clean and right. The fat is cut into small pieces and heated (she does hers in a crockpot), then cooled, and the sediment is scraped off and discarded, then it's back for two more stages of cooking, cooling, and scraping before the finished tallow goes into small jars.
Cooks love tallow's versatility. It has a high smoke point and rich buttery flavor. Stored in an airtight container in the refrigerator, beef tallow also has a long shelf life. It can be used for frying, roasting, or adding flavor to various dishes, and even as a skin moisturizer!
