Founded in 2015

Palmer Farms was started in 2015 with a simple goal: produce better lamb than what was available locally. Early on, we realized consistency—not just quality—was the biggest gap in the market.

Since then, we’ve built a system focused on repeatable results—targeting specific carcass weights, fat cover, and finishing protocols to meet chef-level expectations.

Today, we primarily supply restaurants and chefs, and we use the farm market as a way to make that same product accessible directly to customers who want high-end lamb without guesswork.
